Chocolate Fudge

  • 4 cups sugar
  • 50g butter
  • 1 cup milk
  • 4 Tb cocoa
  • 1/2 tsp vanilla essence
  1. Combine all except vanilla in a saucepan.
  2. Boil gently, stirring occasionally, until it reaches soft ball stage.*
  3. Remove from heat.
  4. Add vanilla (I haven’t tried it, but I’m sure it would be fine without the vanilla).
  5. Beat until thickened.
  6. Pour in to dish.
  7. Cut when cool.

*soft ball = when you drip a little bit in to cold water it forms a ball, when the ball is removed from the water it loses its shape.
