Peanut Brittle

~~~Update December ’10 – I tried leaving the butter out and it still works.  Another dairy free sweet, yay!

  • 1 cup sugar
  • 1/2 cup water
  • 1/2 cup golden syrup (corn syrup would work)
  • 1 1/2 cups raw peanuts
  • 1 tsp vanilla
  • 1 1/2 tsp baking soda
  • 1 tsp butter
  1. Mix sugar, water and syrup in a pot.  Turn on element on medium heat.
  2. Make sure your other ingredients, and a paper-lined baking tray are ready, because you won’t have time to collect them  at the end.
  3. Boil ’till hard ball stage.*
  4. Add peanuts, and stir constantly for five minutes.
  5. Remove from heat.
  6. Stir in vanilla.
  7. Add baking soda and butter.  Stir quickly.
  8. Pour on to paper and spread with a spoon.
  9. When cool break in to pieces.  Store in an airtight container.

The mix will set like rock in your pan and on any utensils, but it melts off if it’s run under the hot tap.

*Hard ball = when dripped in to cold water a ball forms, when removed from the water the ball retains its shape.
